Domes...
Are the traditional choice of many oven builders throught out time. The self supporting shape not only looks beautiful, but allows the shell thickness to be easily tuned to a desired width based on cooking needs without needing to reinforce buttress walls. As an example, a pure bread oven might have 8-9" thick of dense brick which can take a very long time to heat (and a very long time to cool!) A true pizza oven can be as thin as a 2" shell, giving quicker heat up times and more intense broiling power. Many ovens are built as all purpose appliances somewhere between these two. Vaulted Ovens...
Have been popularized as optimal bread baking systems such as the Alan Scott design. The vault can be built easily with minimal cutting and can be a slightly more cost effective option as the labor is minimized by these techniques. The heavy vaulted ceiling of the oven needs strong lateral strength to avoid blowing out the walls. Tallgrass uses Pat Manley's style of a steel harness, designed to hold the ceiling weight without oversizing the walls which would adversely effect temperature ranges. The aesthetics can be pleasing and the square corners can be advantageous to maximizing hearth area by easily accommodating food on square trays or in rectangular baking dishes. |
